There are two ways you can prepare Kashmiri Roganjosh –

Lamb

  • Cut 600g of boneless lamb.
  • In a cooking pan, heat 1 tbsp of cooking oil, and saute the lamb for 10-15 minutes.
  • Add the gravy and mix it well to keep it from sticking.
  • Cover and simmer for 25-30 minutes until the lamb is tender.
  • You can add water, if needed.
  • Give it a final stir and serve hot.

Vegetarian

  • For a vegetarian dish, add 500g of paneer (cottage cheese) to the sauce.
  • The cottage cheese can be used raw or lightly.

Note: Add chopped coriander for a richer, more rich and presentable finish.
