Sharp, Punchy Old Delhi Nihari Gravy With A Lousingly Spiced Finish

Kohinoor Old Delhi Nihari is for people who enjoy a curry with a more assertive spice character and a fuller finish. The sauce is made on a base of onion, tomato, ginger, garlic, red chilli powder, turmeric, and nihari masala.

The aromatic, slow-cooked recipe, with a melange of exotic spices, carries a sharp spice profile with enough edge to feel lively on the palate. The ginger-garlic base gives it a punchy and zingy push, while the chilli and spice mix bring a slightly brisk taste. Because the base is already layered, the dish comes through as bold, aromatic, and pleasantly sharp to keep every bite interesting.

How to Prepare?

There are two ways you can prepare Kashmiri Roganjosh –

Lamb

  • Fry 400g of boneless lamb cut into 2cm (1’’) cubes in 1 tbsp of cooking oil, until light brown.
  • Add 500ml of water and cook the lamb till it is soft and tender.
  • Once the water evaporates, add the contents of the pouch and stir properly.
  • Use a little water to adjust the gravy consistency, if needed.

Vegetarian

  • For a vegetarian dish, you can either use paneer (cottage cheese) or mixed vegetables to the sauce.
  • The cottage cheese can be used raw or lightly.

Note: Top some fresh cream and chopped coriander for a richer, more rich and presentable finish.

Why You’ll Love it?

  • It has that slow-cooked nihari feel, where the gravy tastes layered rather than one-note.
  • Aromatic and warmly spiced profile, which aims for more subtle than sharp heat.
  • Deep flavour of home-cooked, heartfelt nihari.
  • Can be tweaked as per your taste.

    Frequently Asked Questions

Do I need to add extra water while cooking?
Yes, if required. It is suggested to add 500 ml of water while cooking the lamb before finishing with the sauce. If the water seems a bit too much, stir and leave the pan on simmer until the sauce thickens.
Is this sauce meant for quick cooking or a longer simmer?
Kohinoor Old Delhi Nihari sauce helps create a nihari-style dish without the very long traditional cooking time, while still allowing it to simmer during preparation.
Can this work for a dinner serving for more than one person?
Yes, typically it is used to build a shared dish rather than a single ready-meal portion, especially when cooked with meat and served with bread or rice.
