Bold Old Delhi Nihari Gravy with a Richly Spiced Finish
Kohinoor Old Delhi Nihari is crafted for those who enjoy a curry with a bold spice profile and deep, layered flavour. The gravy is prepared with a base of onion, tomato, ginger, garlic, red chilli powder, turmeric and traditional nihari masala, creating an authentic North Indian taste.
Slow-cooked and aromatic, the gravy develops a rich blend of spices that delivers warmth and depth without overwhelming the palate. The ginger and garlic provide a vibrant savoury base, while the carefully balanced spices create a bold, satisfying finish. The result is a flavourful gravy that pairs beautifully with meat while remaining equally suitable for other hearty preparations.

This gravy can be prepared with either lamb or a vegetarian alternative, depending on your preference.
Lamb
- Cut 400g of boneless lamb into 2cm cubes.
- Heat 1tbsp of cooking oil in a pan and fry the lamb until lightly browned.
- Add 500ml of water and cook until the lamb is tender.
- Once the liquid has reduced, pour in the gravy and stir well.
- Add a little water, if required, to adjust the consistency.
- Simmer for a few minutes, then serve hot.
Vegetarian
- Replace the lamb with paneer (Indian cottage cheese) or mixed vegetables.
- You may lightly fry the paneer first or add it directly to the gravy.
- Simmer until the paneer or vegetables are heated through and the gravy reaches your preferred consistency.
